Kirsty's Lockdown Crumble - Spicy Rhubarb and Apple

 

It’s a comfort food classic, and great for when there’s still a bit of a chill in the air!

If the proof of the pudding is in the eating, then crumble is comfortingly solid evidence that the best desserts aren’t delicate or even pretty.

The rhubarb was left on my doorstep from a neighbour who had an endless supply and her family were sick of the pink stuff … so I put it to good use!

Served with lashings of think homemade custard or ice-cream...is your mouth watering yet?!

Sue's Easy Homemade Bread

 

It's really easy and as it's soda bread you don't need yeast. This makes a loaf for four hungry people.

 

Ingredients:

500g flour, 2tsp sea salt, 1tsp bicarbonate of soda, 400ml whole milk , 1 lemon, juiced, 2tsp honey.

 

Method:

1.Heat oven to 200C/180fan/Gas6

2. Mix together the flour, salt and bicarbonate in a bowl.

3. Mix the milk and lemon juice in a jug. Wait few minutes, stir in the honey.

4. Pour the mix into your flour mixture and stir with a knife until it all comes together as a sticky moist dough.

5. Tip onto a floured board. It should be moist and sticky. Shape it into a rough ball. You don't need to knead it as you usually do for bread. So try not to over-handle it.

6. Put the baking paper on a tray. Spread a bit of flour on the paper.

7. Plop the dough. It kind of collapses a bit, but that's OK, shape it again.

8. Using a sharp knife make a deep cross on the top.

9. Place in the oven for 40mn (I always check after say 30mn).

10. Take it out, turn it over and tap on base. It should give a nice hollow sound when it's done

11. Put on wire rack to cool for 20mn.

 

Note: It makes great toast the day after too!
